Air Fried Mini Lemon Berry Scones
🔸1/2 cup Self Rising Flour
🔸1/2 cup Plain Non-Fat Greek Yogurt (I use a little under a 1/2 cup so the dough doesn’t get too sticky)
🔸1/2 cup chopped fresh berries (I used 🍓 and Blueberries)
🔸1t lemon juice
🔸1t lemon zest
Mix flour and yogurt together to create dough. Add in rest of ingredients and gently toss until berries are well incorporated into the dough.
- Roll dough into a ball with your hands and place on a well floured surface.
- Flatten out into a disc/pie shape. Cut into 6 triangles. Bake at 350 F for about 20 minutes.
- Icing is 2T powdered sugar mixed with a little fresh lemon juice.
