Air Fried Corn Cakes With Spicy Yogurt Sauce

Ingredients

Corn Cakes -

Flour (1 cup)

Baking Powder (1tsp)

@daks Original Red (1tbsp)

Red Chili Flakes (1/2 tbsp)

Garlic Salt (1/2 tbsp)

Sugar in the Raw (2 packets)
-
FF Half and Half (3/4 cup)
-
Eggs (2)
-
Frozen Corn (thawed out for abbout 20 mins before) (3 cups)

Serrano Pepper (1/2 minced)
-
Green Onion (2tbsp)
-
Cilantro (2tbsp)
-
@traderjoes Shredded Mexican Cheese Blend (1/4 cup)
- EVOO Spray
-
Sauce
-
Plain NF Greek Yogurt (1/2 cup)
-
Lime (juice from 1/4 lime)
-
Cilantro (2tbsp)
-
Minced Garlic (1tbsp)
- @Herdez Guacamole Salsa (1/4 cup)
Directions
- Mix flour, baking powder, Daks Original Red, red chili flakes, garlic salt, sugar in the raw in a large bowl and set aside.
- In another bowl, mix the half and half and 2 eggs.
- Wisk the liquid ingredients into the dry ingredients. Mix in frozen corn, serrano pepper, green onion, cilantro, and cheese.
- Shape into flat round cakes. Spray air fryer bin with EVOO spray. Cook in the air fryer at 360 for 10 mins (Check at about 7 minutes to make sure they are not burning.) I have an XL air fryer and could fit 4 larger or 6 smaller ones at a time.
- Serve with a homemade spicy yogurt sauce: (Mix all sauce ingredients and chill before serving.)
